Low FODMAP Shepherd's Pie Ingredients

  • 2 large baked potatoes
  • 1 lb ground beef
  • 1/2 cup Fody Low FODMAP BBQ Sauce
  • 1 bell pepper, diced small
  • 2 carrots, diced small
  • 1 stalk celery, diced small
  • Olive oil
  • Salt & pepper
  • 2 tbsp lactose free or almond milk
  • 1 tbsp butter or margarine
  • 1/4 cup shredded cheddar cheese

Cooking Directions for Low FODMAP Shepherd's Pie

Wash potatoes and pierce the outside with a fork, all the way around. Place on a microwave safe dish and microwave for 15 to 20 minutes until cooked through.

Meanwhile, dry meat with a paper towel and warm up a metal pan on medium-high heat. Add ground meat to pan and allow to stick. Season with a little salt and pepper. Once meat has browned, flip over and break up meat. Cook through about 5 minutes.

Add Fody Low FODMAP BBQ Sauce, diced pepper, carrot, and celery to meat. Mix together. Cover and reduce heat to medium-low. Cook for 15 minutes.

Put the oven on broil.

When potatoes are cooked, slice lengthwise in half. Scoop out cooked flesh and place in a bowl with milk, butter, and a little salt and pepper. Mash and mix together.

Rub the potato skins with a little oil salt and pepper. When meat is cooked through, scoop into the open potato skins. Top with a little mashed potato and sprinkle of cheese.

Place on oven rack, second shelf from the top, and allow to broil for 2 to 3 minutes until cheese is melted. Serve your hot and ready Low FODMAP Shepherd's pie with extra veggies and salad as desired!
