Need an easy weeknight low FODMAP dinner featuring one of our favorite fish? Our Low FODMAP Salmon with Maple Dijon Yogurt Sauce recipe takes advantage of Fody Maple Dijon Dressing, which is simply stirred together with lactose-free yogurt and enlivened with fresh parsley.
With Fody Maple Dijon Low FODMAP Salad Dressing as a pantry staple in your cupboard, easy, delicious dishes such as this are just minutes away.
Preheat oven to 425F (220C). Line the bottom of a roasting pan with aluminum foil and brush with a little of the oil. Lay the salmon, skin side down, on the foil, brush with remaining oil, then season with salt and pepper.
Roast the fish for about 10 minutes per 1-inch (2.5 cm) of thickness or just until the fish is cooked through, is opaque and flakes easily.
Meanwhile, gently whisk together the Fody Low FODMAP Maple Dijon Dressing with the yogurt and chopped parsley. Taste and add salt and pepper to taste, if desired.
Serve fish immediately with the sauce. A nice green salad alongside is perfect - or do what we did and steam some potatoes and a low FODMAP serving size of broccoli.
