This Low FODMAP lasagna soup recipe marries traditional Italian flavors with IBS-friendly ingredients to create a classic dish worthy of restaurants along Venice’s Grand Canal. Recommended for those following a Low FODMAP diet, or trying to impress Nonna.
Heat the olive oil over medium-heat in a large pot or Dutch Oven. Next, toss in your ground chicken and cook for about 6 minutes; stir occasionally.
Now, add in your diced tomatoes, oregano, Italian seasoning, and Fody’s Low FODMAP Tomato Sauce and Low FODMAP vegetable soup base; season with salt and pepper to taste. Bring the mixture to a boil, then cover the pot and reduce to low heat. Simmer for 10 minutes.
You’ll want to add your lasagna noodles to the pot now, and then cover and simmer for another 15 minutes. Open up your pot, give your soup a stir, then add the two handfuls of spinach; stir again until spinach is wilted.
Garnish with fresh basil, and serve hot! And if your low FODMAP food tolerances allow for it, top with Parmesan or mozzarella cheese, because cheese makes everything better.
